Reducing Food Waste
Prevention is the best strategy for reducing food waste. At food co-ops, prevention can include accurate demand forecasting; proper storage, temperature control and product rotation; or using food nearing expiration in prepared foods. According to the food recovery hierarchy, the next best option is donating extra food to a local food collection agency or pantry that can distribute it to those in need. Donating food while it is safe, healthy and nutritious should be prioritized over composting whenever possible.
