Mid-level health and wellness consumers have largely made the connection between what they eat and their overall health, and are increasingly looking for great produce, meat/seafood, and prepared foods departments, where “healthy foods” can be found. Additionally, the distinction between restaurants and grocers continues to blur, as consumers look to find freshly prepared ready to eat and other more convenience oriented solutions to meet the demands of busy lives. Increasingly, consumers evaluate stores on their ability to provide a full range of fresh offerings at an affordable price and healthy fresh sales are one indicator of a co-op’s overall competitiveness.
